Sesame Oil Ginger Chicken Mee Suah Soup (麻油姜鸡面线)


Sesame Oil Ginger Chicken Mee Suah Soup…I really love this dish.  I always think about this dish every time I smell the aroma of sesame oil cooking from my neighbor.  It takes only few ingredients to cook this dish, but I personally can finish up a serving of this all by myself because it is really tasty.

麻油姜鸡面线...这是我最爱的一道料理。每当隔壁邻居煮麻油料理时,香香的麻油香味飘入鼻尖就让我很想吃这道简单又好吃的麻油姜鸡面线。煮这料理的材料的都很简单。还有,我真的可以一个人把整锅麻油姜鸡面线给吃完哦!


For those who are not familiar with Mee Suah:
Mee Suah is a fine dried wheat/rice noodle with a smooth texture which is usually sold in dried form. It is very brittle in uncooked form as the strands are really thin and fine. Apparently it is a specialty of Xiamen, Fujian and essentially a Hokkien dish. It is a tradition for Hokkiens to eat mee suah at all important celebrative occasions such as birthdays, weddings & Lunar New Year.

Ingredients
2 tbsp sesame oil
3 thumb size ginger - finely sliced
2 tbsp chopped garlic
1 tbsp “Shaoxing” wine
100g Mee Suah (2 pieces)

Marinate
500g chicken drumstick – cut into pieces
1 tbsp oyster sauce (optional)
2 tbsp sesame oil
1 tbsp light soy sauce
1 tbsp corn flour

Method
1. Marinate chicken with oyster sauce, light soy sauce, sesame oil and corn flour for at least half an hour.
2. Get a medium size soup pot and heat up. Pour the sesame oil and once the pot is heated, place ginger. Stir fry with low heat until fragrant whereby the sliced ginger would curl and turn brown. (High heat will make sesame oil become bitter)
3. Put in the marinated chicken and stir well. Add in 2 cups of water to make the soup and bring it to boil. Add in “Shaoxing” wine at the last.
4. Use another pot, cook the Mee Suah with water (about 2 minutes) and drain the water.
5. Serve the Mee Suah in a big bowl with the sesame oil ginger chicken soup.
麻油姜鸡面线

材料:
2汤匙麻油
3拇指大小的老姜 切丝
2汤匙蒜茸
1汤匙绍兴酒
100g 面线

腌料:
500g 鸡腿肉切块
1汤匙蚝油
2汤匙麻油
1汤匙酱油
1汤匙栗粉

做法:
1. 把鸡肉腌渍半个小时。
2. 烧热一个中型汤锅,然后加入麻油及姜丝。小火慢炒至姜丝变金黄色及香浓。
3. 加入腌渍过的鸡肉以小火兜炒,待鸡肉微熟后加入2杯清水及最后再加入绍兴酒提香。
4. 在另一个锅里烧水煮面线(大概2分钟),熟后倒水及沥干面线待用。
5. 准备一个大腕,加入面线与麻油姜丝鸡汤,就可上菜咯!

  2. 这样子鸡肉才会滑丫!什么肉都好,只要加入一点点粟粉醃肉,就会很滑,肉才很好吃哦!
