Sweet Glutinous Rice Dumpling is a Chinese traditional dessert. Normally, the glutinous rice dumpling serves with brown sugar ginger syrup especially when the weather is cold. However, due to the hot weather in Malaysia for the whole entire year (always summer), I decided to change the recipe with using the dried melon and rock sugar for my version of sweet glutinous rice dumpling. And, it is a very light and healthy recipe. Hope you can try it.
2 cups Glutinous rice (Sticky rice) flour
1 cup Candied Melon
Pandan leaf (optional)
- In a big bowl, mix the glutinous rice flour with water until it forms a big ball.
- Divide it equally into small pieces and lightly roll it into a ball shape (about size of 10cent) using both palms. Set aside.
- Heat up a pot with 4 cups of water and put in the candied melon, pandan leaf (if have) and rock sugar. (Cook about 3 mins and set aside)
3． 用小汤锅煮沸4杯清水及加入冬瓜糖, 香兰叶（如有）和少许冰糖。（煮成甜汤大概需要3分钟，备用）
