Pork Shabu-shabu Salad with Sesame Dressing (芝味猪肉涮涮沙拉)

Shabu-shabu is a Japanese one-pot dish which dip the thin slices of meat into the boiling broth and taken out quickly and then dipped into a special sesame sauce. However, I’m not going to prepare Shabu-shabu today but i gonna use the special sesame sauce to make a Japanese-style salad. Let’s start.

涮涮锅是日本的一个特别料理,把切成薄片的肉浸入沸腾的汤里煮熟,然后沾上特制的芝麻酱享用。不过,今天我不会准备涮涮锅,但是我要使用涮涮锅的特制芝麻酱来做一道和风沙拉。让我们开始吧!

Pork Shabu-shabu Salad with Sesame Dressing

Ingredients:
Sliced Pork 60g
Sake 2 tbsp
Lettuce 4~6 leaf
Shredded Seaweed

Sauce:
White Sesame 1 tsp
White Sesame Powder 2 tbsp
Miso 3 tsp
Mirin 3 tsp
Soy Sauce 1tbsp
Mayonnaise 2 tbsp
White Vinegar 2 tsp

Method:
  1. Use a small pan to toast the white sesame in low heat until the aroma is come out. (Be careful...My sesame seeds are burned with high heat!)
  2. Grind the toasted white sesame into a grinder or chop it with a knife.
  3. Ready a bowl, add in all the ingredients for the sauce and add in the white sesame seeds from practice 2.
  4. Use a whisk or spoon to mix all the ingredients well, especially miso.
  5. Ready a soup pot with hot water, add in the sake and cook the sliced pork.
  6. Once the sliced pork cooked, drain out the water and let it cool. Then, ready a plate with chopped lettuce and the pork, topped with the sauce and sprinkle some shredded seaweed. Done!
  
  

芝味猪肉涮涮沙拉

材料:
猪肉(薄片)60g
清酒 2大匙
生菜 4~6
海苔丝少许

芝麻味酱:
白芝麻 1小匙
白芝麻粉 2大匙
3小匙
味醂3小匙
酱油1大匙
美奶滋2大匙
白醋2小匙

做法:
  1. 将生白芝麻直接放入锅中,无油,以小火慢慢炒到香味出来。(不要开大火,要不然就像我把芝麻给炒焦了!)
  2. 将炒过的白芝麻放入研磨机打碎,或用刀子切碎。
  3. 备一碗,放入其他酱料的材料,再加入做法2的白芝麻。
  4. 用打蛋器或汤匙搅拌好,确实混合好,尤其是噌。
  5. 起一小汤锅,煮沸少许水,再加入清酒及猪肉片。
  6. 猪肉煮熟后捞出来吹风冷却,与切好的生菜装盘,淋上做法4的酱料及撒上少许海苔丝,就好了!

  2. Janice, 放在冰箱可留一两天的。太久的话,美奶滋和味噌会变质的。
