Cool Japanese-style potato salad is one of the great summer dishes, though I can eat it on any day of the year. Of cause, it is so easy to make the potato salad. You gonna learn it!
Japanese Potato Salad
2 medium potatoes, well scrubbed
½ Green Apple
About 3 inches of Japanese cucumber
About 3 inches of carrot
1 hard-boiled egg
3 tbsp Mayonnaise (*Kewpie Mayonnaise/ Any Japanese mayonnaise preferred)
Salt & pepper to taste
- Cut the potatoes into half and boil it until tender. (*You can poke a skewer through one without any resistance)
- Minced the green apple, cucumber & carrot, cut the egg into small pieces, set aside.
- Peel off the skin of the potatoes and cut it into small pieces, use a spoon to smash the potatoes.
