Kinoko Zousui きのこ雑炊(日式香菇雑炊)

Last weekend I have dinner at Pavillion, a newly open Japanese restaurant named Watami, the food is great but the services have to be improved! I really missed the Tappuri Kinoko Zousui (Assorted mushrooms porridge) after the trip, so I search for the recipe from the internet and get this recipe. In fact, Japanese Zousui is a super simple food, this recipe is absolutely simple, fast and delicious.

上个周末去了刚在Pavillion新开张的Watami(日本餐厅), 食物真的很好吃,只是服务有点慢,可能是刚开张吧(...有待改进)!最令我怀念的就是那道Tappuri Kinoko Zousui(百菇雑炊),所以回家后就赶紧上网搜索食谱。其实日式雑炊是一道超简单的料理,是一道家常菜...还有,这一道美食绝对是又快速又美味的!

Kinoko Zousui (Japanese-style Mushroom Porridge)

Ingredients:
500ml Japanese-style Soup Stock(Dashi)   (* I’m using 3 tablespoons of Japanese-style condensed soup stock with hot water, super simple!)
150g steamed rice
1 egg
200g skinless chicken breast, cut in cube
30g Enoki mushrooms
3 Mushrooms, sliced
Scallions, diced
1/2 Carrot, sliced
1 tsp soy sauce
Salt  to taste
Method:
  1. Crack the egg in a bowl and mix it.
  2. Use a soup pot to simmer the dashi over medium heat, add in the chicken meat, enoki mushrooms, mushrooms, and carrot, cook for 3 minutes.
  3. Add in the rice, then add in the egg, use a pair of chopsticks or a fork continuously stirring, stir well and simmer for 3-4 minutes.
  4. At last, garnish with diced scallions. Done.

 

日式香菇雑炊(粥)

材料:
500ml日式高汤  *我是用3汤匙日式浓缩高汤煮汁加热水,超简单的!)
150g白饭
1
颗鸡蛋
200
g去皮鸡胸肉,切小块
30
g金菇蘑菇
3朵香
菇,切片
青葱,切碎
1/2条胡萝卜,切丝
1
茶匙酱油
盐巴少许

做法
  1. 把鸡蛋打在碗里,稍微搅拌。
  2. 准备一汤锅,以中火煨日式高汤,加入鸡肉,金菇蘑菇,香菇,胡萝卜,煮3分钟。
  3. 然后加入在白饭,再加入鸡蛋,用一双筷子或叉子不断的搅拌(搅出蛋花),搅拌均匀,煮多3-4分钟。
  4. 最后,洒上葱花就完成啦!

  1. 高汤是去买的吗!??还是自己要煮呢!??

  2. 我买浓缩的...Tsuyu Dashi万用酱油,里面已经加入柴鱼及昆布了,很方便的!

    如果自己煮高汤其实也不难,只要柴鱼片和昆布而已。
    1。 煮水
    2。 加入昆布(只要稍微软就可捞起,太久昆布会释放胶质,汤就会糊掉。)
    3。加入柴鱼片(有鲜味后就可捞起!)

    这就是传统的日式高汤啦!

    1. Tsuyu Dashi万用酱油 找不到。看到的是for noodle soup. 可以吗?

    2. 你可有试试用Dashi powder(柴鱼粉)...盒装写着Hon-Dashi...柴鱼粉加水就会变成日式高汤了。
